Tuna Salad Sandwich

Ingredients for serving

  • 60 g Whole Wheat Bread 2 x slice thin (30g)
  • 115 g Fish, tuna, light, canned in ..
  • 46 g Rice, brown, long-grain, raw 0.25 x cup (185g)
  • 28 g Mayonnaise, low sodium, low .. 2 x tbsp (14g)
  • 51 g Celery, raw 0.5 x cup chopped (101g)
  • 14 g Lemon juice, raw
  • 14 g Butter, light, stick, without .. 1 x tablespoon (14g)
  • 133 g Cucumber, peeled, raw 1 x cup, pared, chopped (133g)
  • 12 g Lettuce, cos or romaine, raw 2 x leaf inner (6g)
  • 3 g Chives, raw 1 x tbsp chopped (3g)
  • 3 g Parsley, fresh 1 x tbsp (3.8g)
  • 15 g Soup base 1 x cube (15g)

Instructions

  • First cook brown rice. But before water and rice start boiling you need to add a soup base cube for extra taste
  • In the meantime, in a separate bowl, mix mayonnaise, lemon juice, celery and tuna until a smooth creamy mixture is formed
  • Then add parsley and chives
  • Spread the mixture on the bread and add lettuce
  • Serve the sandwich with rice and cucumber
