Instructions

  • Heat the bacon slice in a pan over medium heat for about 3 minutes and then remove it. Place on a paper towel to absorb excess fat.
  • Now add thyme, celery, bell pepper, onion and olive oil in the pan and cook them for at least 5 minutes. Add garlic and continue to cook for a few more seconds.
  • Once the vegetables are sufficiently cooked, add salt, red pepper and corn. Cover the mixture using a lid and allow cooking for about 8 minutes. Now add sliced bacon to the mixture.
  • In a small bowl, mix salt, black pepper and paprika. Rub this mixture evenly over the fish.
  • Heat a little canola oil in a large skillet over medium heat. Cook both the sides of the fish for at least 4-5 minutes.
  • Serve the cooked fish topped with corn / tomato mixture.
