Instructions

  • Heat oil in a large skillet; add onion and garlic cook until translucent.
  • Add chopped chorizo and cook until oil is released. Add paprika, chili powder, thyme and rice. Stir well to mix all the ingredients. Add wine and cook on high heat to burn off the alcohol.
  • Add chopped bell pepper and stock, bring to a boil and reduce the heat to low. Let it simmer for 15 minutes while stirring occasionally.
  • After 15 minutes, add peas and jumbo prawns, adjust the seasoning and cook for 5 minutes while stirring.
  • Remove from the heat and enjoy the supper.
