Instructions

  • Take a small bowl. Add little water, sour cream, ground pepper, salt, lemon juice, mustard and chopped chives and stir well.
  • Take 4 serving plates and place one slice of toast on each of these plates with spinach on top of them. Take a large saucepan and boil little water in it. Add little vinegar in it. Crack one egg at a time into a cup and then gently release it in water. After it is allowed to simmer for a few minutes, use a spoon to carefully remove it and place it over the spinach.
  • Just before serving, add sauce over crostini.
