Instructions

  • In a small bowl, mix garlic, 2 tsp Dijon mustard, 2 tbsp lemon juice and vinegar. Now add 2 tbsp olive oil and whisk the ingredients well to thicken the mixture.
  • Add salt, pepper and red onions. Set the bowl aside for at least 30 minutes.
  • Now add cream cheese, grated lemon rind, chopped capers, green onions, goat cheese, remaining Dijon mustard, lemon juice and pepper and mix well.
  • Slice the ciabatta bread horizontally and spread cream cheese evenly across both the pieces. Now place salmon over cheese on the bottom piece of bread.
  • Top it with marinated red onion and spinach. Place the top half of bread over the bottom bread piece and wrap them tightly.
  • Cut the sandwiches into 4 equal pieces. Heat the grill to a high setting. Brush both the sides of bread with olive oil and keep it on the grill for at least 5 minutes. Now cut the sandwiches diagonally and serve immediately.
