Instructions

  • Preheat the oven to 375 Fahrenheit.
  • Spray oven proof cup cake molds or ramekins with olive oil.
  • Mix flour, coconut powder, baking powder, baking soda, cinnamon powder into a big bowl.
  • Take another bowl and add egg whites, agave nectar, vanilla extract and finely grated carrot, mix vigorously until fluffy.
  • Combine the dry ingredients to the egg white and mix well, add milk to get the desired consistency of the batter.
  • Fill half the ramekin with the mixture and tap.
  • Bake for 15 minutes, remove from the oven and let it cool for some time before serving.
