Instructions

  • Season zucchini with olive oil, salt, paprika, cumin powder and turmeric.
  • Grill the zucchini from all sides until tender and brown. Cut in small sizes after grilling.
  • Marinade garbanzo beans with lemon juice and minced garlic.
  • In a large pan heat little olive oil, and saute onions add cumin seeds, turmeric and paprika.
  • Add quinoa, two cups of water and salt. Cover and cook for 15 minutes on medium heat, stirring occasionally.
  • When the quinoa is cooked add garbanzo beans with marinade, grilled zucchini, and parsley.
  • Mix well to combine all the ingredients, and serve hot.
