Instructions

  • Peel and cut the sweet potatoes in one inch chunks.
  • Preheat the oven to 400 degree F and prepare the baking tray by spraying oil to it.
  • Season the sweet potatoes and onions with salt, pepper and oil.
  • Place in the baking tray and roast for 20 minutes or until sweet potato is tender and soft.
  • Remove the tray from the oven and add green beans and walnuts to it and roast again for 5 minutes or until green beans are tender.
  • Meanwhile prepare the dressing by whisking together Greek yogurt, garlic powder, lemon juice, salt and pepper.
  • Serve roasted sweet potato and vegetables on lettuce bed and top with Greek yogurt dressing. Serve warm.
