Instructions

  • Clean the spinach and cut the leek into rings
  • Heat up skillet and add olive oil
  • Add leek and cook until soft
  • Add spinach and cook for a couple of minutes
  • Add the eggs (you can either whisk or just throw them in the pan)
  • Close the lid (or if you don't have a lid try to flip the egg mixture after the egg is becoming solid on the bottom)
  • Crumble the feta on top of the mixture and add a dash of pepper
  • Eat with bread or rice!
