Instructions

  • Preheat your waffle iron to a medium heat
  • In a small microwave safe bowl combine apples, apple spice, stevia, and water
  • Microwave for 2 minutes until apples are semi-soft and set aside
  • In a large mixing bowl combine oat flour, baking powder, ginger, and protein powder and mix until blended
  • Gradually add in the unsweetened almond milk and apple mixture to flour until well blended
  • Divide batter evenly among two waffles and bake until golden brown
  • While waffles are cooking to prepare toppings
  • In a small microwave safe dish combine Greek yogurt, agave nectar, apple pie spice, stevia, and vanilla extract heat in microwave for approx. 20 seconds set aside
  • In a medium sauce pan melt coconut butter and add sliced apples sauté each apple slice until golden brown on each side
  • Top each waffle with 4 apple slices and half of the yogurt mixture
  • Garnish with cinnamon and serve warm
