Instructions

  • Take a medium size bowl and combine oatmeal, flour, baking powder, baking soda, cinnamon and protein powder.
  • In another bowl whisk together milk and vanilla extract.
  • Combine the two mixtures and whisk until batter is smooth.
  • Heat a non stick pan over medium heat. Spread the oil and pour the batter ½ cup at a time and cook the pancake on low heat for 2-3 minutes.
  • Flip the pancake when golden brown on the bottom and cook on the other side in the same manner.
  • Remove to a plate and set aside.
  • To prepare the topping, combine honey and mango cubes in a small sauce pan and cook over medium heat.
  • Cook until thick, or the mango is sticky and golden.
  • To serve, take a pancake and place honey glazed mango on the top.
