Instructions

  • Place butter paper on a large plate and set aside for later use.
  • Heat a small, non-stick pan over medium heat and heat 1 tablespoon of water. Add grated ginger, brown sugar, cinnamon powder and coconut.
  • Reduce the heat to low and cook the mixture while stirring until the sugar begins to caramelize.
  • When the mixture is thick and begins to stick to the spoon, drop one tablespoon of the mixture on the butter paper.
  • Spoon the mixture on the paper one ‘drop’ at a time and let them cool.
  • When cooled, remove the coconut drops from the paper and enjoy.
