Instructions

  • Place chicken between 2 plastic sheets and pound until you get an even thickness. Sprinkle the chicken with a little salt and pepper. Now dredge the chicken in flour.
  • Melt a little butter in a skillet placed over medium heat. Add chicken and cook for a couple of minutes. Turn the chicken over and add capers, lemon juice and chicken broth. Reduce heat and simmer for at least 3 minutes.
  • Sprinkle the chicken with parsley and cook for a minute.
  • Now bring the sauce to a boil and serve over chicken.
