Instructions

  • Preheat the oven to 400 degree Fahrenheit (200 degree Celsius) . Spray mini muffins tin with cooking oil, keep aside.
  • Heat oil in a pan and cook green onions, bell pepper, and sweet corn until soft. Season with salt and pepper and remove from the heat.
  • Take a large bowl and combine all the dry ingredients along with shredded cheese and mix.
  • In a separate bowl whisk together eggs, heavy cream and sugar. Add to the dry ingredients along with cooked sweet corn mixture.
  • Mix thoroughly, add crab meat and gently mix with the dough.
  • Spoon the dough mixture to the muffin cups and bake for 20 minutes until puffed.
  • Remove from the oven and let it cool before serving.
