Instructions

  • Set the oven temperature to 350 degrees Fahrenheit / 175 degrees Celsius.
  • In a large bowl, combine salt, nutmeg, cinnamon, baking soda, all-purpose flour, baking powder and brown sugar.
  • Take another bowl and combine margarine, orange juice, egg substitute and thinly diced sweet potato. Then add the dry mixture into this mixture. Stir all the ingredients until they are moist. Fold in cranberries.
  • Take a loaf pan and spray it with cooking spray. Pour a spoonful of batter into it. Sprinkle almonds over the batter.
  • Bake the bread mixture at the set oven temperature for at least 70 minutes.
  • Once the bread is baked to perfection, remove it from the oven and allow it to cool over a wire rack.
  • Serve immediately.
