Instructions

  • Preheat a grill pan on high to grill the bagels. (You can also use a Panini-grill)
  • Cut the bagel in half and roast for 2 minutes on the open side.
  • Heat a skillet over medium heat, add oil and sauté scallions for 2 minutes.
  • Add egg whites, salt and pepper and cook while stirring continuously.
  • When egg whites are ready, spread it over the tossed bagel, topped with tomatoes (cut into half) and cheese.
  • Grill for 2 minutes just to melt the cheese. Serve immediately.
