Instructions

  • Add tofu, egg whites and egg in a bowl and whisk them together. Season them using salt and pepper.
  • Heat oil in a nonstick skillet over medium heat.

  • Add egg mixture to skillet and cook for a couple of minutes.
  • Top it with scallion greens and bell pepper mixture.
  • Serve immediately.
