Instructions

  • First up, you need to prepare couscous. For this, you need to place a large skillet over medium-flame and melt some butter in it. Then add some almonds in it and sauté for a few minutes so that butter is slightly browned and almonds are toasted. Then add couscous and continue to stir the mixture before removing it from heat.
  • Now place a saucepan over high heat and boil broth in it. Now, into the pan add the couscous mixture. Cover it completely and set it aside for a few minutes. Then add oranges, salt, parsley, and pomegranate seeds.
  • To prepare grouper you need to combine red pepper, peppercorns, coriander and little salt in a coffee grinder until you get a smooth mixture. Now rub this spice mixture evenly over the fish.
  • Now place a grill pan over medium-heat. Then coat it with little cooking spray. Now place fillets over it and cook for a few minutes. Flip the fillets and continue cooking the other side for a few minutes. Once both sides are cooked evenly serve them with couscous.
