Instructions

  • Cut the tomatoes into small cubes, remove the seeds
  • Peel and segment the grapefruit, cut into pieces
  • Chop the basil and make the salsa: add the tomatoes, grapefruit, basil and 4 tbsp of oil to a bowl
  • Add pepper, salt and lemon juice to taste
  • Brush the salmon with oil and sprinkle with pepper and salt
  • Heat up a grill pan and grill the fish for 8-10 minutes
  • In the meantime: cut the zucchini into 1/2-inch-thick slices
  • Brush the slices with olive oil and sprinkle both sides of the zucchini with oregano, garlic, salt and pepper
  • Grill until zucchini is tender, about 4 minutes per side
  • Cook rice according to the package directions
