Instructions

  • Spray cooking spray over the surface of a cast-iron skillet. Heat some oil in the skillet over medium flame.
  • After chopping, add garlic, bell pepper and onion and saute for at least 5 minutes.
  • Over the vegetable mixture, start arranging the potato.
  • Sprinkle little red pepper, black pepper and salt over the mixture.
  • Cover the mixture and continue heating for at least 20 minutes or until the potato is tender.
  • Preheat a stove. Now mix eggs, chives and parsley in a bowl.
  • Pour the above mixture over the vegetables and cook under medium flame for at least 10 minutes.
  • Once the mixture is set, top it with tomato and continue heating so that it turns light brown.
  • Just before serving, garish the dish with fresh parsley sprigs.
