Instructions

  • Heat a deep pan over the medium heat add chicken pieces, chopped carrot, corn, black beans and chicken broth with 1 cup of water.
  • Cover and cook for 15 minutes on high heat.
  • Then add chopped tomatoes, salt and pepper, let it simmer on medium heat for another 5 minutes.
  • Add cheese (if you are using) and parsley, stir and cook for 2-3 minutes to finish the soup.
  • Remove from the heat and serve with tortillas chips.
