Instructions

  • After separating the chicken meat from the bones, chop it coarsely.
  • Combine chili powder, pineapple preserves and barbecue sauce in a saucepan placed over medium heat.
  • Add chicken to the saucepan and continue to cook for at least 5 minutes.
  • Lightly toast the bread in a toaster. Remove chicken from heat.
  • Spread out 8 slices of bread on the table and top each with a lettuce leaf. Add cooked chicken on top.
  • Top with some more lettuce and cover with another slice of bread.
  • Use toothpicks to secure the sandwiches and serve immediately.
