Instructions

  • Remove 1 chipotle chili from can while reserving the rest for future use. Mince chili.
  • Heat a little oil in a pan over medium heat. Add cumin, bell pepper, garlic and onions. Saute the mixture until it becomes tender.
  • Add minced chili, corn, tomatoes, chicken broth and chicken. Bring the mixture to a boil. Reduce heat and simmer for a few minutes.
  • Serve hot.
