Instructions

  • Cut the tofu in small cubes and season with red chili powder, salt and allspices.
  • Heat a non stick pan over medium heat and fry the tofu cubes with olive oil, while stirring.
  • When lightly brown from all sides, remove from the heat and keep a side.
  • In the same pan heat olive oil and add cumin seeds, ginger paste and onions, cook for 2-3 minutes.
  • Add tomato and spinach puree, mix well and cook for a boil.
  • Add fried tofu, adjust seasoning by adding salt and pepper, and simmer for 2-3 minutes.
  • Sprinkle cilantro and serve hot with brown rice.
