Instructions

  • Cut the chicken in bit size pieces.
  • Peel and cut the sweet potatoes in bit size pieces.
  • Boil the sweet potatoes for 5 -8 minutes until almost done, do not over cook it.
  • Heat a large non stick pan and saute onion until soft with little olive oil.
  • Add garlic and saute for 2 minutes.
  • Add chicken pieces and cook until chicken is done.
  • When the chicken is cooked to desired doneness, adds sweet potatoes and chopped spinach.
  • Add thyme, salt and black pepper to adjust seasoning.
  • Cook for 2-3 minutes while stirring, add lemon juice and remove from the heat.
  • Tough guy’s chicken hash is ready to serve.
