Instructions

  • Set the oven temperature to 400 degrees Fahrenheit.
  • Use a sharp knife or a fork to pierce the potatoes several times. Then place the potatoes in the oven and bake for at least 50 minutes or until the skin are crisp.
  • Now transfer the potatoes on a wire rack and allow them to cool down for about 10 minutes.
  • Then slice each potato into half lengthwise. Remove the flesh whilst keeping ¼ inch of it intact. The removed flesh can be used for later use.
  • Brush the inside of each potato with melted butter. Then season it with salt and pepper.
  • Now arrange the potato slices on a baking sheet with the skin side up. Bake them for a couple of minutes or until they start to crisp.
  • Now flip the potato halves and continue baking so that the top edges start to brown.
  • Add tuna salad evenly across the potato skins and top each of them with cheese.
  • Bake the potato skins again until the cheese is melted and tuna is sufficiently hot.
  • Serve immediately.
