Instructions

  • Peel and cut the sweet potatoes in small pieces.
  • Heat the oil in a large skillet over medium heat. Cook the onion until translucent.
  • Add spices – coriander, cumin, salt and pepper, stir and cook for 30 seconds.
  • Add broth, beans and sweet potatoes.
  • Mix all the ingredients and bring to a boil, then cover and let simmer for 30 minutes over low heat while stirring occasionally.
  • After 30 minutes, add lime juice and cilantro stir and cook for 2-3 minutes and remove from the heat.
  • Serve warm.
