Instructions

  • Set the oven temperature to 400 Degrees Fahrenheit.
  • Bake the potatoes for at least 45 minutes so that they become tender. Then allow them to cool.
  • Once the potatoes have cooled, peel and grate them. Now season them with salt and pepper.
  • Now set the oven temperature to 425 Degrees Fahrenheit.
  • Use cooking spray to spray two muffin pans.
  • Then scoop 3 tbsp grated potato into each muffin cup.
  • Use your finger to gently press the bottom and sides of each hole to create a nest.
  • Use cooking spray again. Then bake for another 20 minutes. Make sure the muffins do not burn.
  • Once the nests have turned golden brown, remove them.
  • Allow the nests to cool. Crack an egg into each nest once they are cooled.
  • Sprinkle each nest with salt and pepper and bake again for 15 minutes.
  • Once baked, remove the nests and serve with a fork or a spoon.
