Instructions
- Set the oven temperature to 400 Degrees Fahrenheit.
- Bake the potatoes for at least 45 minutes so that they become tender. Then allow them to cool.
- Once the potatoes have cooled, peel and grate them. Now season them with salt and pepper.
- Now set the oven temperature to 425 Degrees Fahrenheit.
- Use cooking spray to spray two muffin pans.
- Then scoop 3 tbsp grated potato into each muffin cup.
- Use your finger to gently press the bottom and sides of each hole to create a nest.
- Use cooking spray again. Then bake for another 20 minutes. Make sure the muffins do not burn.
- Once the nests have turned golden brown, remove them.
- Allow the nests to cool. Crack an egg into each nest once they are cooled.
- Sprinkle each nest with salt and pepper and bake again for 15 minutes.
- Once baked, remove the nests and serve with a fork or a spoon.
