  • Cook quinoa as per the package instruction.
  • Season chicken with salt and pepper.
  • Heat olive oil in a wok, add onion sauté for 2 minutes, add chicken and cook for 10 minutes on low heat.
  • When the chicken is tender remove from the heat.
  • Allow chicken to cool, and shred it for bite size pieces.
  • Combine cooked quinoa into the chicken, add corn, jalapeno and parsley mix well.
  • Adjust the seasoning by adding salt and pepper according to your taste.
  • Cook for 2-3 minutes while stirring continuously. Serve hot.
