Instructions

  • Cut the chicken breast in small pieces, also peel and chop sweet potatoes.
  • Cut the bell pepper and onion in thick wedges.
  • Preheat the oven to 375 degree F.
  • Take big bowl - add chicken, onions, bell pepper, sweet potatoes, salt and pepper. Mix well to combine all.
  • Add garlic, lemon juice, spices, oil and zest in a small bowl and whisk together.
  • Pour over the chicken mix and stir to combine.
  • Place the chicken and vegetable mixture in baking tray and spread evenly.
  • Bake in the oven for about 40 minutes or until chicken is soft and tender.
  • Add almonds in the last 10 minutes and turn the chicken and vegetable pieces for even cooking.
  • Serve along with Greek yogurt dip.
