Instructions

  • Saute chopped onion with olive oil, in a large pot.
  • Add ginger and saute for 1-2 minutes.
  • Stir in thyme, chopped tomatoes, vinegar and vegetable broth and boil.
  • Add peeled and cubed sweet potatoes and simmer for 10 minutes.
  • Add black beans, bell pepper, black pepper and salt and simmer for 5 minutes.
  • At the last add chopped coriander leaves and serve.
